Fresh Kohlrabi w/ Dill and Scallions

If you wonder what to do with Kohlrabi, you’re not alone! Try this simple 3 ingredient combo. I think the flavor and texture is best at room temperature.
Ingredients:
Kohlrabi, Dill, and Scallions
Directions:
Cut off the kohlrabi leaf stems, then peel the bulb.
Cut the bulb in half, top to bottom (for more manageable sized pieces) then slice thinly perpendicular to the half cut. I use a mandoline on the thinnest setting.
Lay the slices out on a plate, sprinkle with some fresh chopped dill fronds and scallions and eat!
Take it a step further with a 4th ingredient for a salad: Make a salad by tossing those ingredients with shaved or thinly sliced Tiara Cabbage. Tiara Cabbage is so juicy there is no need for dressing.
Note: This was perfect served with Grilled Teriyaki Salmon and Roasted Red Beets (cooled to room temperature).
